White pepper is a stripped-down version of black pepper. These little peppercorns have been "retted," which is a fancy way of saying they were soaked until their red skins fell off. For a more subdued flavor, use freshly ground white pepper instead of its bolder counterpart.

Whole pepper keeps its flavor longer than the ground because less surface area is exposed. We prefer to grind fresh peppercorns to get the most potency. A simple coffee bean grinder will do the trick, or you can go old school and use a mortar and pestle

Chinese and Thai recipes favor white pepper in their recipes, and in France and Spain, it is used to flavor red wines. It is also wonderful for adding tea blends for contrast in color, especially in marsala chai and rainbow-colored pepper blends.

Store in an airtight container away from temperature extremes and sunlight.
