White pepper is a stripped-down version of black pepper. These little peppercorns have been "retted," which is a fancy way of saying they were soaked until their red skins fell off. For a more subdued flavor, use freshly ground white pepper instead of its bolder counterpart.
Whole pepper keeps its flavor longer than the ground because less surface area is exposed. We prefer to grind fresh peppercorns to get the most potency. A simple coffee bean grinder will do the trick, or you can go old school and use a mortar and pestle.
