Star Anise (Illicium verum), or Chinese Star Anise, is an exotic, star-shaped Asian shrub spice. With a licorice-like flavor, it's used in Indian & Asian cuisine, potpourri & teas. Store in airtight, cool & dark containers. Grind just before baking as the flavor fades into powder. Whole pods add a spicy touch to perfumes, potpourri & teas. Ground is best for baking, but wait to grind until you are ready to use it, or it will lose its flavor quickly. Chew the whole pod for breath freshening. Industrial uses include candy, gum & and syrups, and is used to make the drug oseltamivir, also known as Tami-flu. Use sparingly; a little bit goes a long way!
